Poke (pronounced poh-KAY) is a Hawaiian delicacy traditionally made with cubed ahi tuna. This recipe, created by North Shore Poke Co. of Huntington Beach, won the chefs' competition at the 2014 Orange County I Love Poke festival.

1 lb. sashimi-grade ahi tuna, cut into
1/4 cup soy sauce
3 tbsp. sweet chili sauce
3 tbsp. sesame oil
3 tbsp. chopped green onion (reserve tops for garnish)
3 tbsp. thinly sliced sweet yellow onion
1 tsp. sesame seeds, for garnish
2 tsp. finely chopped green onion tops, for garnish
Combine all ingredients except sesame seeds and onion tops. Mix until sauce is evenly incorporated. Garnish mixture with sesame seeds and onion tops.
