Mexplosion salad

Greenleaf Chopshop's version of taco salad is lighter in calories, but still packed with flavor!

Ingredients

1/3 cup baby greens
1/4 cup cooked black beans
2 tbsp. grilled corn kernels
3 baby tomatoes, halved
1 tbsp. finely diced red onion
1 tbsp. sunflower seeds, toasted
1/5 avocado, thinly sliced
1 tsp. minced fresh cilantro
3 tbsp. lemon juice
2 tbsp. store-bought, low-sugar barbecue sauce
2 tbsp. store-bought, citrus basil vinaigrette dressing
2 tbsp. shredded jalapeño Jack cheese

Instructions

Combine all salad ingredients and toss with dressing. Serve immediately. Recipe can easily be doubled.
