Green herb sauce

5 garlic cloves, finely chopped
Grated zest and juice of 2 lemons
1 cup chopped basil leaves
1 cup chopped cilantro leaves
1/2 cup chopped Italian parsley leaves
1 cup olive oil
1 teaspoon salt
1/2 teaspoon freshly ground pepper
Combine the garlic, lemon zest and lemon juice in a bowl. Stir in the cilantro, basil and parsley, then add the olive oil. Stir until well blended. Add the salt and pepper, stir to blend, then taste the sauce. Add more salt if desired. Yields about one cup.
It is great on baked potatoes, scrambled eggs and on hearty fishes like salmon.
