To print this recipe, choose a print size:
2 1/3 cups pancake and baking mix
2/3 cup milk
3 tbsp. melted butter
13 tbsp. sugar, divided use
2 lb. strawberries, sliced
1 pint whipping cream
2 tsp. vanilla extract
Preheat oven to 400 degrees. Mix baking mix, milk, butter and 3 tbsp. sugar until well blended. Pour out dough onto a flat surface and form to about 1-inch thickness. Use a biscuit cutter to make shortcakes. Place on a greased cookie sheet to bake for 10 to 12 minutes or until golden.
Meanwhile, slice berries into a bowl and pour 1/2 cup (8 tbsp.) sugar over them to allow juices to develop.
Pour cream into the bowl of a mixer with a whisk attachment. Beat on medium-high speed until soft peaks form. Add vanilla and 2 tbsp. sugar. Continue to beat until desired thickness.
To assemble, split shortcakes open and fill with strawberries and fresh whipped cream.
