"In the summer our family makes blueberry pancakes in an outdoor cook shack for Glory Bound Cowboy Church," says farmer Liz Giusto, adding that the services are held at the Clements Buckaroos Rodeo Grounds in Clements. "We also provide bacon from the local meat market and eggs from Bella Dilly Farms when in season. At times we serve well over 300 people. There is no fee charged, only a donation to the Cowboy Church. We found an easy way to make sure each pancake has a generous amount of blueberries. This method is fast and can be entertaining. As our kitchen crew says, ‘We fire a handful of blueberries on each pancake.'"
Take your favorite blueberry pancake recipe.
Mix and pour onto an iron skillet or directly onto large commercial griddle.
Sprinkle blueberries evenly over the top of each pancake.
Cook and flip pancake.
Sprinkle fresh blueberries on top before serving.
Serve with syrup, peanut butter or favorite topping.
