2 1/2 lb. boneless, skinless chicken breasts, poached
1 1/2 cups chopped celery
1 cup (6 ounces) Original Blue cheese crumbles
1 cup Point Reyes Original Blue dip and dressing (or other creamy blue cheese salad dressing)
1 cup dried cherries
1/4 cup chopped green onion
1/4 tsp. black pepper
1 cup walnuts, toasted and chopped
2 cups julienned romaine lettuce
10 large spinach or plain wraps
Cut poached chicken breasts into smaller chunks; set aside.
In a large bowl, mix celery, blue cheese, blue cheese dressing, cherries, green onion and pepper. Add chicken and stir to combine. (Chicken mixture can be made 1 day ahead and refrigerated.) Add walnuts and romaine. Gently stir. Divide mixture evenly among wrappers and roll.
Cut in half to serve.
