Raspberry sauce (recipe follows)
1-2 medium-sized peaches
2 scoops of ice cream
1 cup roasted almond slices (optional)
2 cups whipping cream (optional)
For Raspberry sauce:
One 10-ounce package of raspberries
2 tbsp sugar
3 tbsp raspberry liqueur
Puree raspberries and sugar in the container of a food processor. Add the liqueur and chill or use immediately.
In a single-serving dish, place half of a peach, cut side up Top the peach with a scoop of vanilla ice cream and pour some of the raspberry sauce on top. Finish off with almond slices and whipping cream and serve immediately.
