Butternut squash 101 with Tracy

Learn an easy way to cook with butternut squash from Tracy!

Butternut squash is one of my favorite ingredients year-round, but especially in the fall and winter. It's rich, buttery and decadent. (Basically, everything I could ask for in a vegetable.) But what I don't love is peeling it, so I discovered an easier way: Microwave it first! Here's how: Poke some holes all the way around the squash with a fork. Next, cut the bottom and top off, then cook the squash in the microwave for 3 1/2 to 4 1/2 minutes or until just slightly softened. Remove, let cool and use a vegetable peeler to peel the skin off the squash. It's that easy! And almost as easy is this recipe for a simple butternut squash salad.
