Bell peppers are one of my favorite things to cook with because they're so colorful and they taste really good too. And bonus: They're a huge source of vitamins C and A.

One cool thing about bell peppers is, of course, the different colors. They all start out green and change colors as they mature. The green pepper changes to yellow or orange before reaching its most ripened color of red. The longer the peppers stay on the vine, the sweeter they become!
