Sweet and crunchy carrots are notably rich in antioxidants, beta carotene, potassium, vitamins and dietary fiber, according to "The Nutrition Professor" Timaree Hagenburger. What's more, these highly nutritious root vegetables contain only 41 calories per 100 grams, a negligible amount of fat and no cholesterol.

Timaree is a registered dietitian with a master's degree in public health. She also is a nutrition professor at Cosumnes River Community College in Sacramento and a food lover who likes sharing tips and tricks on how to enjoy fresh California fruits and vegetables—such as carrots.
